Completed

The end of this day marks the finale of our project. Today is the day each of us has surpassed the month-long journey into vegetarianism. More on that at the end of today’s blog post.

For breakfast I ate some blueberry pie. I watched some youtube, I skipped lunch and for dinner we ate vegetarian feijoada. After dinner I rewatched some episodes of Archer which -mannn I wish they’d just upload the new season already. After Archer I played some Rainbow Six Siege.

I’ve decided to continue my vegetarian diet for a indefinite duration of time. I’m not sure when I’ll stop, but for now I just want to continue doing it. Being a vegetarian really isn’t as hard as some people perceive it to be. Some people talk about their meat consumption like they’re in some kind of heroin clinic. Look, I’m a meat lover, I love everything from steak to haggis. But in no way am I unable to live without eating meat. Eating meat is just a simple choice of life, you don’t ”need” it and neither are you incapable of leading an enjoyable life without it.

As I said, eating meat is just a simple choice of life and it’s enormously easy to live without it. At the end of the day, you do you. If you are so inclined to eating meat and can’t imagine a peaceful life in a world where you can’t pursue that habit, then don’t stop. I really don’t care whether you eat meat or don’t. In my train of thought, the project goal was just wanting to make people aware of the problems meat brings with it, be it moral or environmental. The goal was just to make people aware of the widespread ignorance that’s covering the ugly face of the beloved food item.

Day 30 (Almost there)

Today is my second-to-last day of taking part in this challenge, I believe I’ve been holding up quite good. To be honest I really like the vegetarian lifestyle and am almost certain that I will continue it for some time after this project.

I woke up around 11 AM, that’s pretty early for me. I had some cereal and went to the gym to workout. Afterwards I drank a protein shake and -again- binge watched some South Park.

For dinner I ate some leftovers from yesterday. I’m still very much dreading school.

Day 14

I woke up around 10 o’clock today. After leaving my bed I went downstairs to have some breakfast. I made myself a vegetarian omelette. It tasted really good.

After lunch I watched the Big Bang Theory. I kept thinking about the first school day which is in about a week. This fact haunted me for the rest of the evening.

For dinner a had a vegetarian pizza.

Day 29

Today was a relatively short day; I woke up around 1PM, made myself some toast. Afterwards I binge watched some episodes of Cutthroat Kitchen and South Park. School’s almost starting and I’m dreading it.

For dinner I made myself some mac&cheese based on a recipe by You Suck At Cooking, it tasted pretty good. Haven’t done much else today.

Day 28

Today I woke up around 2 PM. I made myself a blueberry smoothie, which tasted as regular. I hung out with a friend of mine and later in the evening I made plans with the rest of the participants to hold a vegetarian barbecue; I’d passed by some vegan-bbq meat replacers while working and got curious to how a vegetarian barbecue would taste (or even work lol).

I looked up some vegetarian barbecue recipes, watched some episodes of Voltron LG, ate dinner with my family; it was tomato rice with some feijoada. I also watched The Incredible Hulk with Edward Norton -the same guy who played in the film Fight club, which I was religiously. Edward Norton was a pretty good cast for the Hulk, too bad he got replaced later on by Mark Ruffalo.

I must say, I am enjoying taking part in this going-vegetarian-for-a-month experiment. Vegetarian food tastes great and the diet is hugely profitable for the environment. I haven’t had a craving for meat ONCE, and I also like the fact that I don’t feel as involved in the slaughtering of animals for the meat production. I’m thinking about growing this appreciation for vegetarianism into a habit and am considering going semi-vegetarian (also called a flexitarian), but I’ll keep you updated on that.

Further I haven’t got much to say, I’ll be going off to bed now, goodnight!

Day 13

I woke up around 3 pm today, which is a personal record. It felt really weird to miss out such a significant amount of time of the day. It felt like I robbed myself some hours of my life. My friend and I headed downstairs to get breakfast or lunch I don’t know. Anyway, it was our first meal of the day. Surprisingly, I wasn’t very hungry so I just at one Kaiser roll.

After some gaming and the second leg of the movie it was around 6pm and I went home.

I was very tired, so after eating a vegetarian pasta, I went to bed.

Tiago: Breakfast; Vegetarian Breakfast Burrito with Scrambled Eggs

Ingredients (for 1 person):

INSTRUCTIONS

  1. In a small bowl, whisk the eggs together with the milk until well-beaten. Season with salt and pepper to taste.
  2. Heat the oil or butter in a skillet or frying pan over medium-high heat.
  3. Carefully add the eggs to the skillet. Cook the eggs, frequently mixing, until you have scrambled eggs of the desired consistency.
  4. Warm the flour tortilla in the microwave for a few seconds, just until it is warm and soft. Place the scrambled eggs in the center of the flour tortilla, and top with cheese and salsa.
  5. Wrap and enjoy your vegetarian breakfast burrito!

Lunch: Arancini

Ingredients (for 2-4 people):

  • 25g mixed dried wild mushrooms
  • Butter
  • Flavourless oil, e.g. groundnut, for frying
  • 1 small onion or banana shallot, peeled and finely diced
  • 1 garlic clove, peeled and crushed
  • 250g risotto rice
  • 125ml dry white wine
  • 500ml vegetable or chicken stock
  • 25g Parmesan cheese, grated
  • 9 mini mozzarella cheese balls or ½ a large ball 
  • 1–2 eggs, beaten
  • About 100g plain flour
  • 125g panko breadcrumbs or ordinary breadcrumbs
  • Sea salt and freshly ground black pepper
  • Lemon wedges, to serve (optional)

INSTRUCTIONS

  1. Soak the mushrooms in 250ml hot water for 20 minutes.
  2. Heat a heavy-based, high-sided frying pan or saucepan over a medium heat. Add a generous knob of butter and a glug of oil and sauté the onion and garlic for about 5 minutes until soft but not coloured.
  3. Add the rice and stir vigorously around the pan for a couple of minutes until the grains start to turn slightly translucent at the edges. Deglaze the pan by pouring in the wine and scraping up the bits at the bottom. Bring to the boil, then lower the heat and simmer for a minute or two to burn off the alcohol.
  4. Meanwhile, heat the stock and add the soaking liquor from the mushrooms. Add a ladleful of the hot stock mixture to the rice and stir over a medium heat until absorbed, then add another ladleful. Repeat until all the stock is used up or the rice is tender but still al dente. Make sure to stir regularly to create a creamy risotto. (This should take about 20 minutes.)
  5. Chop the rehydrated mushrooms into small pieces and gently stir into the cooked risotto. Add a knob of butter and the Parmesan, then stir to mix well. Taste and adjust the seasoning if necessary, then leave the risotto to cool (it will do this more quickly if you spread it on to a baking tray).
  6. If using mini mozzarella balls, halve them; if using part of a large ball, cut it into 1.5–2cm cubes. 
  7. Lay out 3 plates or shallow bowls. Put the beaten egg in one, the flour (seasoned with a pinch of salt and pepper) in another and the breadcrumbs in the final one.
  8. Once the risotto is cooled (it doesn’t matter if it is still a little warm, as long as it has stiffened up a bit and is cool enough to handle), roll it into balls the size of golf balls. Push a piece of mozzarella into the middle of each ball, ensuring that the cheese is completely enclosed. Leave to set in the fridge for at least 30 minutes or overnight. 
  9. Heat a deep-fat fryer to 170°C or fill a large saucepan one-third full of flavourless oil and heat until a cube of bread dropped into the hot oil sizzles and turns golden brown in 30 seconds.
  10. Dip a rice ball into the flour, shake off any excess, then dip into the egg, allowing any excess to drip off. Finish by coating completely in the breadcrumbs. Repeat with the remaining balls.
  11. Deep-fry the balls in batches for 2–3 minutes until golden brown all over. Remove with a slotted spoon and drain on kitchen paper. Serve immediately while the middles are still melting. Drizzle with lemon juice if desired.

Dinner: Roasted root veg

Ingredients (for 12 people):

  • 3 kg Maris Piper potatoes
  • 16 carrots
  • 12 parsnips
  • 1 bulb of garlic
  • ½ a bunch of fresh rosemary , (15g)

INSTRUCTIONS

Preheat the oven to 190°C/375°F/gas 5. Peel the potatoes, then scrub, top and tail the carrots and parsnips, cutting any larger ones in half lengthways. Cook in a large pan (or two) of boiling salted water for 8 minutes, then drain in a colander and leave to steam dry. Pick out the carrots and parsnips and put to one side, then give the colander a few light shakes to chuff up the potato edges.

Add 4 tablespoons of olive oil (or turkey fat) to two large roasting trays and season each with sea salt and black pepper. Squash the garlic bulb, then divide the cloves between the trays, along with the rosemary sprigs. Tip in the veg, add a good swig of red wine vinegar and toss to coat. Roast for 40 minutes, then remove from the oven and lightly squash with a fish slice to burst the skins. Place back in the oven for a further 20 minutes, or until golden and crisp.

Day 12

I woke up around 7 AM today. For breakfast I had some decent croissants.

After breakfast we raced to our family to have lunch with them. I took a vegetarian tosti (similar to a croque monsieur). Since half of my family are vegetarians already, I could just chose the same as they ordered. My tosti was basically like a regular one but without the ham. It tasted fine.

When we had finished our food, we went to my grandmother. After two hours we went home. Up on arrival I quickly packed my bag and went to a friend of mine. After some gaming we had dinner. We ate wraps. I said I was a vegetarian so they set the meat apart from the rest.

After dinner we gamed a little bit. It was really fun. After that we watched a movie called The Hobbit: An Unexpected Journey. We watched about half of the movie but we were so tired that we decided to stop the tape and go to bed. It was 2 AM…

Day 27

Haven’t really done much today.

Woke up around 9 and went off to work around 10 for a 7-hour shift. After that I watched some youtube videos and when I was done with that I watched Captain America: The first Avenger; pretty decent film.

Other than that my day’s been pretty empty. I’m heading off to bed now, goodnight!

Day 26

Today I woke up around 3 PM, totally blasted from last night. Me and the guy who stayed over went out to get some breakfast; We didn’t have much cash so we decided to pass by a local grocery store and purchase some of those god-like chocolate cakes we’d eaten the previous night. After that we went back to my place and some time after that we parted ways.

I haven’t really done anything else next to watching Iron man 3; In the film Tony Stark kept having ptsd referring to a past event where aliens invaded New York. I had not a single clue about what the hell he was stressing over and after some google searches, I ended up finding out that I wasn’t watching the Marvel MCU films in the right order, which I figured, I just didn’t think it’d make such an impact on the viewing experience. Thus, from now on I’ll be watching all of the Marvel MCU Avengers-themed films in chronological order. Starting with Captain America: The first Avenger.

For dinner I ate some spaghetti with mushrooms and spinach, coated with a creamy sauce. That’s all for now, goodnight.
