Day 21 (Ten days left wow) +Spiderverse

Ten days left till the month is over.

I haven’t really done much today, or atleast, my memory’s a bit shady regarding anything that I did today -which isn’t much. I began the day with a buttered croissant with cheese, I think I skipped lunch, and somewhere around the evening I decided to finally watch Into the Spiderverse; I’ve been recommended watching it, many, many times.

The film was really great. I liked it a lot. The intro of the film, I thought, was really well-made. It reminded me a lot of the intro from Fight club; It had the same kind of chaotic, flashy vibe with the trip-hop music on the background making it even crazier to look at. Awesome.

The first few minutes weren’t really that great, still cool though, but nothing really mind-breaking; But I do understand that that’s commonly needed to build up a story, so nevermind me :D. Then, when spiderman died, the movie began to get really interesting. The film had some cool scenes, cool reveals, a villain which you can sympathise with, a good soundtrack, but what I really liked about the film is that it’s centred around the multiverse theory.

Something happens with Spiderman that results in multiple versions of him from parallel universes getting teleported to his universe. Spiderman dies, but after a short while, a kid and said alternate versions of spiderman team up to fight the villain and go back to their home-universe. I thought that the alternate versions of spiderman were really neat; the filmmakers didn’t make up random characters for the film but rather looked through marvel comics and picked out some cool ones from the marvel multiverse. My favourite version of spiderman is either Spiderman-noir or Peter B. Parker; Spiderman-noir because I really, really like the theme of noir. Seeing Spiderman-noir’s nazi-punching, private eye, backstory set in 1933 really had me psyched. Peter B. Parker is also a favourite; I really liked how they made his backstory so depressing and heartbreaking. They really nailed the mood around this guy.

Overall, really great film.

After finishing the movie I went downstairs and fixed myself a weird croissant-sandwhich constructed from all kinds of leftovers I found laying around the house e.g. chips, rice, curry mayonaise, cheese etc. I really don’t know what got into me resulting in that craving.

After that I headed up the stairs and now we’re here. Ten days left, let’s go!

Tiago: Breakfast; Fried egg Florentine toastie

Ingredients (for 1 person):

  • 2 slices of white bread
  • knob of butter
  • 25g cheddar, grated
  • small handful baby spinach
  • 1 tbsp olive oil
  • 1 medium egg
  • sriracha hot sauce, to serve
  • extra spinach or watercress, to serve

INSTRUCTIONS

  1. Remove the centre of both slices of bread with the rim of a drinking glass or a cookie cutter. Spread each slice with a little butter and top both with the cheddar and torn spinach leaves – pack as much cheese and spinach on as you can. Heat a large non-stick pan over a medium heat and drizzle in the oil.
  2. Once the pan is hot, sandwich the bread together. Using a fish slice, place in the pan and press down to brown. Cook for 4-5 mins on a medium heat until the cheese begins to melt.
  3. Flip the sandwich over and crack the egg into the hole in the middle. Cover the pan with a lid to cook the egg through for 3-4 mins. Transfer to a plate, drizzle over some sriracha and serve with spinach or watercress on the side.

Lunch: Vegetable Frittata

prep time 5 mins | cook time 20 mins | total 25 mins

Ingredients (for 6 people):

  • 1 tbsp Olive Oil
  • 1 Onion, finely chopped
  • 1 tsp Garlic, minced
  • 1 Red Bell Pepper (Capsicum), finely chopped
  • 1 Carrot, grated
  • 190g (1 bunch of 8 stems) Broccolini * Can replace with broccoli
  • 150g (1 cup) Peas
  • 6 Eggs
  • 2 tbsp Whole Milk * Can replace with cream if you prefer
  • 35g (1/2 cup) Cheddar Cheese
  • 1 tsp Dried Oregano
  • 1/2 tsp Pepper
  • Salt (to taste).

INSTRUCTIONS

  1. Preheat oven to 220c / 425f
  2. In a mixing bowl, whisk together the egg, milk, cheese, herbs and seasoning. 
  3. Heat oil in a 10″ cast iron pan, add the onion and garlic and cook for approx 5 mins. Add the bell pepper (capsicum) and carrot and cook for a further minute. Add the broccolini and cook for a further min. Stir in the peas. 
  4. Give your egg mixture a final whisk and pour the mixture over the vegetables. Stir briefly to distribute the mixture evenly across the pan. 
  5. Cook on the stove top for approx 1-2 minutes. Just until the edge of the frittata has turned lighter in colour. 
  6. Transfer to the oven and bake for approx 8-10 mins, ideally, you should take the frittata out of the oven when the middle still has a SLIGHT jiggle to it or when it is just set and no more.
  7. Cool in the pan for 5 mins and then slice and serve.

Dinner: Veggie Burger Recipe

Ingredients (for 4-6 people):

Total Time: 20m

  • 1 can pinto or black beans (other varieties also work)
  • 3 tbsp tomato paste or ketchup
  • 1/2 tsp salt
  • 1/2 tsp garlic powder, optional
  • 1/4 tsp onion powder
  • 2 tbsp flour of choice or oat bran
  • 1/2 cup cooked diced vegetables of choice

INSTRUCTIONS

These burgers can be baked, grilled, or fried, and feel free to use whatever veggies you have on hand. For the burgers in the pictures, I used roasted mushrooms, asparagus, and onion. You can also change up the flavor by adding different spices, such as paprika, cumin, or curry powder.

To make the veggie burgers, first drain, rinse, and mash the beans either by hand or in a food processor, depending on desired burger texture. Stir in all other ingredients, and form patties. Either pan fry (flipping halfway through cooking) or place on a parchment-lined pan and bake at 350 F for 10 minutes. Flip, then bake an additional 10 minutes or until desired texture is reached. (You can also grill the burgers. Grilling instructions are listed earlier in this post.) Leftovers can be refrigerated or frozen in meal prep containcers for a later day.

Day 6

I started my day at 9 o clock. I ate some bread and a boiled egg for breakfast. It tasted quite good.

I was kind of nervous the whole day because of the Formula One Grand Prix of Hungary, which took place at 3 o’clock.

Since I wasn’t hungry, I didn’t eat a lot for lunch. I just ate some bread.

The majority’s of the Grand Prix was boring so this made me a bit tired. I didn’t really do anything the rest of the day.

For dinner I ate pizza.

august 4th

I woke up at around 11 pm too the sun shining in my eyes. After coming downstairs I ate some toasted bread with Nutella. Me being super tired I also drank some coffee.

Tomorrow I would celebrate my birthday so I also went to the supermarket. I bought a dozen bags of chips, like 8 2L bottles of Cola and had my parents buy 2 crates of beer and some liquor.

For lunch I ate some more bread, because I didn’t feel like putting in much effort my lunch.

After my lunch I did not really do anything else. I ate dinner at 7pm, my mom made this vegetarian dish, which tasted great, although it would have been a lot better with meat to be honest.

I went to bed somewhere between 12 – 3 am.

Day 20

Today’s been kind off a rough day. I had 5 hours of sleep. Had to wake up earlier to go feed the cat, then I headed off to work for a 7-hour long shift. The weather’s also been quite depressing. After work I biked back to the cat to give her her early-dinner. I spent some time with her on the couch. She apparantly thought it would be cute to go onto my lap, lay there, and in the meanwhile massacre my perfectly good pair of pants. This sounds inappropriate; I’m still refering to the cat.

Afterwards I had some vegetables with rice at home which tasted pretty decent and after that I spent my evening staring at my ceiling while listening to some weird cafe noir playlist I found. The first song was the only one I liked so I kept refreshing that one. After a while I’d dozed off to sleep. When I awoke from my nap I went upstairs to watch the latest episode of The Official Podcast and after that I made myself a croissant with cheese and butter. Later I watched some old cartoons I found on my TV like rugrats before heading off to bed.

I also watched this really heart-warming video of a octopus thanking his rescuer.

My Birthday

I woke up somewhere in between 12 and 1 pm. My grandma visited us to wish me a happy birthday. I was not officially celebrating my birthday today but I did drink some coffee with my mother and my grandma.

As breakfast I ate some cherry pie with a bit of whipped cream on top. As I said I also drank some coffee. I had no lunch today since I didn’t wake up before 12 pm.

For dinner we ate the same thing as yesterday, the meal was made out of satay sauce with beans and rice.

After dinner we kind of celebrated my birthday a bit more, but we did not do anything special. I will “officially” celebrate my birthday the 9th with my family and I will throw a “party” the 5th for my friends.

I stayed up until 4am listening to some music and endless scrolling trough birthday messages I got throughout the day.

Day 5

I woke up just past 9 o’clock, which was a decent time. I wasn’t particularly hungry so I just ate a few slices of bread for breakfast.

Later today my grandmother came by and we went out for lunch. I had an apple pie. It tasted surprisingly good.

After my grandma left, I watched the Formula One qualifying.

I did not spot the homeless rabbit today so he was probably ruining someone else’s property.

We ate delicious pancakes for dinner.

Thursday The Third

woke up around 1 pm, which is starting to be normal. Even tough I try really hard to wake up an earlier time, it is simply impossible. Today I really didn’t do anything, besides going to the supermarket to buy some pie.

For breakfast I just ate some bread and drank some coffee :o. After breakfast I went outside to walk my dog. My dog doesn’t really do anything besides sleeping all day long. And for some reason he still doesn’t want to walk with me, after walking him for the passed 6 years almost daily, he just revolts when I have to take him outside.

No lunch for me today, and for dinner we ate a delicious meal made out of satay sauce with beans and rice. I also had a Valess burger. After dinner me and my mother went to drink some coffee and this local coffee shop.

In my evening I didn’t do much besides watching some more Netflix. When time hit 12pm it was officially my birthday. After my father congratulated me, no one else because everyone was either out or asleep, I continues my Netflix marathon and went to bed.

Day 19

Hi, I’m sorry I wasn’t able to post yesterday; I and a couple of others had thrown a birthday party for a friend and afterwards we all crashed at my house. If you’re still -god knows why, interested in knowing what I ate for some reason I’ll gladly summarize it for you: I started my day at 9:20 AM, I drank a cup of orange juice, then I skipped lunch and for dinner I ate some of the vegetarian party snacks that were available.

Today I woke up at around 12, skipped breakfast. I then parted ways with my friends and went to see the cat I was babysitting. After some time I headed home, took a shower and went off to work. After work I went home and sat in front of my computer listening to music before going to sleep. For dinner I had some of the leftover garlic bread.

Day 4

I woke up today at a sold 9:30. This is kind of unusual for my standards. I am an early bird most of the time. What is the point of sleeping in anyway? You just waist some minutes from your day, and in the end , some hours of your life. Because it adds up.

Anyway, I got up and made myself some breakfast. While doing this I saw a black rabbit in my garden. I didn’t think my garden was it’s natural habitat but I’ll never know. I saw him a couple of months ago as well. He actually stayed for a couple of weeks, hopping through the streets like a rolling stone, or a hobo. After a month or so, he got missing, gone with the wind. Today, I was happy to see my little buddy back again.

I ate some cornflakes as I usually do for breakfast. I didn’t eat the usual thing thought, because today I made some scrambled eggs. I was very proud of the result. It was the first accomplishment of the day, and it felt damn good.

My brother and I watched the greatest sitcom in the world (The Big Bang Theory), which was great as usual.

For dinner I ate couscous. My parents and my brother had chicken in the couscous, and I had no meat at all. It tasted good though.

Today was kind of easy, I am, starting to get the hang of it.
