Day 11

I said that yesterday was already unbelievable hot, well today it was even warmer. It was 40 degrees today and I am happy that this day is almost over because this heat just isn’t fun.

I started the day by making myself a bowl of cornflakes with milk. For lunch I ate some of the leftovers of the salad we had from yesterday’s supper. Again didn’t do much today simply because it was way to hot for that. One simple activity and liters of sweat will already appear everywhere on your body.

For dinner we had fries which we bought at a local cafeteria, I had fries with mayonnaise, curry and raw unions, we call that a ‘friet speciaal’. The combination of the sauces and unions may sound strange but trust me it is very tasty. I also had a cheese soufflé with it. 

I have to say that I am now sometimes start to crave for meat when I see it, but I am still able to handle it easily.

Day 10

Today I woke up at 4 PM, by an alarm I set reminding me that I’ve got work at 5. I prepared for work and without eating anything I left my house. The work amount was tolerable this time but still sucked. When I got off work I ate ehh, I think it was a sandwhich or something, still vegetarian though. This whole mangled sleep schedule is making me tired, forget things and affects my writing badly. So, sorry about that. I’m trying to get it fixed

I watched most part of Stranger Things’ season 3; Steve’s luck seems to have hit rock bottom, poor guy; Jim started off the season by being portrayed as some cranky fat dad who smokes like 8 packs a day but has gradually restored his character’s old vibe of being a total badass who still smokes like 6 a day so, bitchin; Mike and Eleven broke up, that really got to me damn lol, but I know they’ll get back together eventually. Oh yeah and poor Jim, he got stood up on a ”date”, feels bad man.

Nancy’s turned even more into an annoying nutjob, but don’t get me wrong, I still like her. I just didn’t like how she got Jonathan fired and didn’t even seem to care at all. And I still miss Bob, the poor guy; that flashback Joyce got when they entered that abandoned laboratory really hit me in the feels, lol.

But anyways, it’s 3:12 AM at the moment and I’ve got my goal set to sleeping sooner than 6 AM. So, goodnight.

Day 10

Today it is Wednesday and I woke up at around 10 o’clock. I knew that it would be very hot today, but this hot! I barely haven’t done anything today just because it was to hot to do something else besides swimming and doing nothing, so that is what I did.

For breakfast I had bread, like usual. For lunch too, very simple. Furthermore, the only thing I did besides eating was watching netflix. For dinner, my mother made a salad for us. It was a very delicious salad which was almost like a Caesar salad, but without any meat of course. I am taking an ice cold shower now to cool down before I go to sleep. See you tomorrow.

Day 9

Today I woke up at 2 PM; better than 3 PM, right? It’s hot as HELL outside so I didn’t do much else than hang around in my bedroom -not that that’s any different from what I usually do but y’know, this time it’s hot.

I woke up without having any appetite, which is weird as I hadn’t eaten anything in like 17 hours. So I didn’t go downstairs for breakfast nor lunch and just stayed in my room, in front of my computer, watching Stranger Things. Which I’ve got to say has gotten A LOT better in the second season.

For dinner I ate a fried egg-and-mozzarella sandwhich, which tasted quite descent.

But continuing on Stranger Things; I woke up at 2 PM and haven’t done anything else until now next to watching Stranger Things season 2. It’s 9 AM and I still haven’t slept, I watched the whole of season 2 in one go. 9 Episodes, ranging from around 45 to 60 minutes each. Season 2 was pretty great, I got to see more of Jim Hopper’s badassery and more of the Upside Down, but one thing I can’t stand is Steve’s luck; the poor guy left his group of friends for this one girl and then she all of a sudden just bails on their relationship; Then when Steve tries to make up for it -which he shouldn’t even have to do- by suprising her at her house with a rose bokeh, she isn’t even there cause she screwing some other dude, Jonathan; which is also a really great guy. I just think that Nancy’s kind off a b***tch. But it’s like 9 AM so don’t take any of this too seriously, I’m tired and might have missed some parts of the show essential to understanding Nancy’s behaviour. I just feel bad for Steve alright.

Also, El and Mike are hella cute together. When Eleven suddenly showed up at the school Snowball to suprise Mike; that was the cutest shit ever. Haha and that joke about the pull-out really cracked me up good.

I feel bad about Bob dying, that part really sucked cause he did seem to be a genuinely nice guy.

It’s clear as day outside and it’s time to go to bed.

First week completed

Actually this is the 8th day but that doesn’t matter.

I have now been awake for over 35 hours, since I could not get any sleep last night. Luckily I could stay awake for the day drinking enough coffee, so I wouldn’t mess up my sleep schedule even more. After my first 2 cups of coffee I ate my breakfast. I made some scrambled eggs with lots of cheese on top of some toast.

For lunch I ate some cereals and some more coffee. In the late afternoon I felt a lot better even though I was awake for much longer. Since I felt better I went to play some football with my friends.

For dinner my father prepared some wraps with an fantastic salad and a vegetarian chicken burger. All together it tasted very good, although the chicken wasn’t the greatest.

I am going to sleep early tonight, because I feel like my body is about the die. Night!

Day 9

Woke up at around 12 AM, which is pretty late for my habits. But that is probably because I had barely slept last night, I stayed overnight witn one of my friends, so I also had breakfast there. For breakfast I had cornflakes and we baked eggs. I skipped my lunch because we only had breakfast at one o’clock. 

After breakfast I went home and decided to get some more sleep because I was very tired. My mother woke me up a few hours later for dinner. Our dinner was very basic today, potatoes with vegetables and meat, I didn’t had meat of course so I had vegetarian meat instead of it. It was the same meat as the one I had eaten on the first days since I am vegetarian. 

Now I am going back to bed again, next blog will be uploaded tomorrow, bye.

Day 8

I’ve been a vegetarian for over a week now and to be frank, I kinda like it; I don’t feel guilty for things like eating meat or having such a great impact on the greenhouse effect. I know it’s stupid to say that because animals keep getting slaughtered each day and a single indivual isn’t going to make a difference to that nor to the tremendous carbon emissions that gets released into the environment each day. But still, it makes me feel like I’m not adding such a ”heavy” weight to the environment(or animals, etc.)’s back.

It’s a moral dilemma, eating meat; We love animals, yet we do constantly practice mass-genocide on a group of them for our own consumption. But is it wrong? I couldn’t tell you. We are biologically hardwired to eat meat, it’s part of our survival. But have we digressed so far from this state of having to survive as a species that we should proceed as —okay wait it’s like 7 AM and I still haven’t slept, I’m not in the mood to get all philosophical and stuff.

Okay so quick summary of the day: Woke up at 3 PM, don’t judge me; ate nothing, lol how wasn’t I hungry; watched Stranger Things the rest of the day, isn’t that bad of a show after all, in fact I kinda like it and I’ve got to say that it does deserve some part of its staggering popularity eventhough I still think it’s a bit overrated, but I just finished season 1 so what do I have to say, right? We had dinner at around 8 PM and that’s it, first and only meal of the day; it was tomato-rice(holy sh*t that sounds stupid) with french fries and a mixture of scrambled eggs, mushrooms and cabbage, I believe. It was pretty tasty. Hats off to my dad.

So that’s it, I should probably go to sleep now but I still have like 40 minutes left on this Stranger Things episode so, priorities.

Monday

Today I woke up at around 11 o’clock. For breakfast I made myself some scrambled eggs and self-baked bread from the oven. Finally something else than normal sandwiches. For lunch I had musli with yogurt, like I have already had a few times before . 

Later this day I went to a friend of mine and I also had dinner there. For dinner I ate fries and a ‘kaassoufle’. I don’t know if there is an precise word for it but the literal translation for it would be cheese souffle. 

I am already vegetarian for a week now and it is still going smoothly. However, sometimes I do miss eating meat because I just prefer most dishes when there is meat in it but that doesn’t stop me from continuing being vegetarian of course.

Luca: Breakfast; Veggie Breakfast Sandwich

The perfect breakfast sandwich offers layers of opposing textures and flavors. Here’s what I suggest

  1. Toast your English muffin, for a little bit of crunch and some warm, toasty flavor.
  2. Spread good mayonnaise across the bottom bun for some creaminess and tanginess. I recommend Sir Kensington’s brand.
  3. Mash up some avocado in a bowl. The mash spreads easily over the remaining bun.
  4. Once your cheesy egg is ready, place it onto the mayo side. If and only if tomatoes are in season, add a slice of red tomato.
  5. Then add some red onion for some pungent flavor and crunch to contrast the soft egg. If you’re sensitive to onion flavor, rinse the sliced onions under cool running water to talk off some of the edge.
  6. Top the red onion with a couple splashes of hot sauce. I love Tabasco. The tangy acidity almost makes the onions taste pickled, and breaks through the rich, creamy flavor of the eggs and cheese.
  7. Arugula offers fresh, peppery flavor. Load it up!
  8. Finally, place the avocado bun on top, avocado side down. To slice, carefully slide a sharp, pointed knife into the center of the sandwich, and slice across to one edge. Repeat in the opposite direction. Serve warm.

How to scramble the egg

Basically, you scramble up one egg with a tiny bit of water (the water helps prevent the egg from browning too soon). Pour it into a hot, medium-sized, buttered pan. It starts to set almost immediately.

Place a couple of slices of cheese in the center to melt, then fold one side over the middle, followed by the opposite side. Repeat with the remaining two sides. And you’re done!

Eggs cooked this way will please kids, as well as runny yolk-averse individuals and basically everyone. Try it, and you’ll see.

Lunch: Chickpea spinach salad


This is an easy super healthy lunch that can be made in only a couple of minutes.

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 handful spinach
  • 3.5 oz feta cheese (or similar cheese)
  • 1 small handful raisins
  • 1/2 tbsp lemon juice (white or malt vinegar is also good)
  • 3 tsp honey
  • 4 tbsp olive oil
  • 0.5 – 1 tsp cumin, ground
  • 1 pinch salt
  • 1/2 tsp chili flakes (or dried cayenne pepper will do the trick nicely)

Instructions

  1. Chop the cheese and add with the spinach and chickpeas to a large bowl
  2. Mix the honey, oil, lemon juice and raisins in a small bowl
  3. Add the cumin, salt and pepper to the dressing bowl and mix well
  4. Drizzle devilishly delicious dressing over the salad
  5. Enjoy 🙂

Dinner: Vegetarien Nasi

Ingredients (for 4 people):

  • 700g Chinese leaf
  • 20g fresh coriander
  • 4 british free range eggs †
  • 1 red chilli
  • 2 spring onions
  • 80g fine green beans
  • 1 bag of roasted peanuts
  • 200g carrots
  • 150g fragrant basmati rice
  • 4 garlic cloves
  • 2 tsp bright yellow turmeric
  • 50g fresh chilli jam
  • you will also need some: Salt and vegetable oil
  • can be served with: Soy Sauce Sachet

Add the basmati rice and 175ml [350ml]cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat, remove the lid and leave the cooked rice to cool

Peel and finely chop (or grate) the garlic 

Cut the red chilli[es] in half lengthways, de-seed (scrape the seeds out with a teaspoon) and chop finely

Pick the coriander leaves from their stalks and chop the stalks finely – reserve the leaves for garnish

Grate the carrot[s] 

Shred the Chinese leaf finely 

Trim and slice the spring onions finely

Chop the green beans into bite-size pieces

Chop the roasted peanuts roughly 

Add the chilli jam to a small bowl with 1 tbsp [2 tbsp] cold water and give it a good mix up – this is your sweet chilli dressing

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat 

Once hot, add the chopped coriander stems (keep the leaves for later!) garlicspring oniongreen beans, ground turmeric and chilli (can’t handle the heat? Go easy!) with a pinch of salt and cook for 3 min

Add the cooked rice to the pan and cook for 2 min 

Add the shredded Chinese leaf and cook for a further 1 min only (you want to cook it quickly so it keeps a little crunch!)

Stir in the soy sauce and grated carrot – this is your vegetable fried rice 

Divide the vegetable fried rice among your serving plates and wipe your pan clean for the next step

Return the pan to a medium heat with a drizzle of vegetable oil

Once the pan is hot, crack your eggs into the pan

Cover with a lid and cook for 3 min or until done to your liking

Tip: give your eggs a little shake before you crack for perfectly centred yolks!

Tiago: Breakfast; Blueberry smoothie

Ingredients (for 1-2 people):

  • 1 banana
  • 2 generous tablespoons of yoghurt (flavor is up for own selection)
  • 1/2 cup of blueberries
  • 1 cup of milk

INSTRUCTIONS

  1. In a blender, combine all of the ingredients.
  2. Blend on low until the blender gains traction, then ramp up to the highest speed as soon as possible (or if your blender has a smoothie function, that will work great).
  3. Once the smoothie is completely smooth and creamy, taste it and blend in extra amount of an ingredient if you find that it lacks amount of said ingredient. Divide the smoothie into 2 glasses. Serve immediately!

Lunch: Tomato and egg salad

Ingredients (for 2-3 people):

  • 3-4 large ripe tomatoes
  • 4 hard boiled eggs
  • 1/2 cup mayonnaise
  • basil
  • salt, pepper

INSTRUCTIONS

  1. Core each tomato and cut it thickly, into slices. Lay the slices on a pretty dish, in one layer. Cut the eggs in half, and place them on top. Spoon the mayonnaise over the tomatoes, making sure each tomato gets a bit. Season with salt and pepper and scatter with torn basil leaves.

Dinner: Vegetarian Spaghetti

Ingredients (for 2-3 people):

  • 200 grams of sliced mushrooms
  • 100 grams of spinach
  • 200 grams of sliced cabbage
  • 1/2 red bell pepper (optional)
  • 2 cut onions
  • 3 garlic cloves
  • 4 tablespoons of olive oil

INSTRUCTIONS

  1. Add olive oil on to a large pan on medium heat and afterwards add the sliced onions and garlic cloves.
  2. After the onions start to look transparant add the sliced mushrooms.
  3. After 2 minutes add sliced cabbage (and optional, the sliced red bell pepper.)
  4. When the cabbage starts to shrink and go soft, add the spinach.
  5. Add salt and pepper to taste. Best served with rice or pasta.
